Sandwich Inventor? It might not sound right, and you might squint an eye and cock your head right. Please, humor me. A hard boiled egg sandwich inspired me to start this blog. The revolutionary sandwich (yes revolutionary,it more easily connects breakfast and lunch. you can cut it into triangles and serve it during brunch....!!REVOLUTIONARY!!) came to me when, late in the evening, I was eating a hard boiled egg. I thought to myself "I can almost taste butter" while I was devouring the egg, because what I truly wanted to eat was a nice, warm plate of poached eggs on buttered toast with the soft boiled yolks slit open with butter inside (one of my favorite breakfasts my mother would make me.).So, I sliced up a hard boiled egg and distributed it evenly over warm buttered toast, salt and peppered to perfection. Once I made a salami sandwich with pepperjack cheese. The bread was toasted smothered with thick and chunky salsa. It sounded good at the time, but you can only imagine the aftermath. It was the first time I can remember having heartburn and the burning squirts. Mistakes happen and failure is a good way to learn. But just trust me on that hard boiled egg sandwich. It's comfort food.
